Jamestown Hospitality Group is a growing collection of restaurants and catering venues, that include Tonic Seafood and Steak, TBG Braeloch Brewing, Park Café, Juniper, Jamestown Catering, and Kitty Knight House.
We are seeking an experienced Sous Chef to join our team! As part of Tonic Seafood and Steak, you will be preparing food and setting up stations, which contributes to our customer’s satisfaction.
What You’ll be Doing:
• Assist the Executive Chef and assume those responsibilities in his absence.
• Schedule all kitchen staff weekly to ensure that all benchmarks are achieved.
• Create menu items for the following menus: Lunch, Happy Hour, Dinner, Late Night and Special Events
• Run lunch and dinner service and expedite the line.
• Cost out all menu items to ensure we are meeting our margin benchmarks.
• Order product and manage inventory based on food sales. Inventory all items for (4) week period closings, as well as providing weekly inventory for all protein items.
• Document food matrix and kitchen systems and processes.
• Communicate with FOH and Marketing team when menu changes and specials when featured.
• Conduct staff pre-meal meetings advising FOH of specials, new items, 86’d items and any other pertinent information to assist in service.
